Christmas 2009 Goodies

Over the Christmas holiday break I made lots of goodies! I use the cookies as gifts for family, friends, and neighbors. These goodies are gifts that everyone looks forward to and I enjoy making them.


Raspberry Filled Poppyseed Shortbread Cookies

2 sticks of butter, softened
1/2 c. sugar
2 egg yolks
1 tbsp vanilla
2-1/4 c. flour
3 tbsp. poppy seeds
1/8 tsp. salt
1/2 c. seedless raspberry jam

Beat butter & sugar until light; beat in egg yolks and vanilla. In medium bowl, combine flour, poppy seed, and salt; gradually add to butter mixture, mixing until just blended. Shape dough into 1" balls. Place 1" apart on lightly greased baking sheets. Make a deep indentation in center of each ball. Bake at 350 degress for 15 to 18 minutes or until edges just begin to brown. Transfer from sheet to wire racks; cool completely. Spoon jam into centers of cookies; dust with powdered sugar, as desired.


This quiche was just something I sort of created. I used eggs, half & half (fat free), swiss and cheddar cheese, fresh spinach, and peppered bacon. It was good but I did use a bit too much cheese. I know! It's hard to imagine too much cheese!




Peanut Butter Cookies
This is my Grandma Holtmann's recipe so it's top secret! ;-) Would love to share but I have to keep it in the family!







Mac-N-Cheese

10 oz elbow macaroni or whatever kind you like (I like cavatappi)
2 eggs
1 tbsp dry mustard (I use about 1/4-1/2 tsp of regular mustard)
1/2 tsp salt
1/4 tsp pepper
2 c half n half; I use fat free
1 lb grated sharp cheddar or use a mixture of different cheeses; asiago is good mixed in along with swiss too.

Preheat oven to 375. Cook and drain macaroni. In large bowl lightly beat eggs with mustard, s & p. Stir in half n half, then cheese then macaroni. Pour into buttered 2 qt casserole, bake 20-25 minutes. Put under broiler 1 minute to make top brown and crisp.




Butternut Squash Pie

Crust:
1-1/2 c. ground gingersnaps coolies (about 36 small)
1/4 c. butter, melted
1 tsp. grated fresh orange peel, finely chopped

Filling:
2-1/2 c. butternut squash
2 eggs
1 c. evaporated milk
1/2 c. packed brown sugar
2 tbsp grated fresh orangge peel, finely chopped
2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves

Topping:
1/3 c. chopped hazelnuts, toasted
1/3 c. chopped walnuts, toasted
2 tbsp. dark brown sugar
2 tbsp butter

Crust: Combine ground gingersnaps, butter, and orange zest. Pat into pie pan anbout 1/2 way up the sides. Set aside.

Squash preparation: Cook squash by piercing skin with a fork. Place on paper towel in microwave. Cook on high power 20-25 minutes or until fork tender. Let stand 5 minutes. Peel, cut, remove seeds and puree in food processor fitted with metal blade or blender.

Preheat oven to 350 degrees.

Filling: In large bowl, beat eggs lightly. Stir in squash, milk, sugar, cinnamon, ginger, salt, zest, and cloves. Pour into prepared pan. Place on cookie sheet. Bake 50-55 minutes or until knife inserted in middle comes out clean.

Topping: Combine toasted warm nuts with butter and brown sugar. halfway thru the baking time mound nuts in the middle of the pie.

Refrigerate before serving. If desired, serve with whipped cream.



Cherry Chip Mini Cupcakes with Maraschino Cherry Buttercream

I used a boxed cake mix and made the butter cream with maraschino juice instead of milk.



Seven Layer Bars


Place one stick of butter in a 9x13 in pan in a 350 degree oven until melted. Remove and sprinkle 1 c. graham cracker crumbs in the bottom. Combine in a bowl 1 c. each of: butterscotch chips, chocolate chips, coconut, and chopped pecans. Mix together and then sprinkle over the graham crumbs. Distribute evenly. Then pour one can of condensed sweetened milk over the mixture in the pan. Bake for 25-30 minutes. It will bubble. Let it cool completely and cut into squares.

These are a secret given that my sister in law and I are in a locked competition of "The Best Cookie"! ;-) I will say though, if you want to make a great chocolate chip cookie use the Tollhouse recipe on the back of Nestle's chocolate chip bag.

Buy a bag of sweetened flaked coconut & use the recipe on the back!
No one will ever know!

A new year! A new updated blog and lemon cake!

Well, I have been feeling inspired lately by all the blogs that I have been reading. I hope to give my blog an update and make it a bit more user friendly. I hope to include recipes and of course, photos of the creation. I have been wanting to create more items and test new recipes so, when I do I hope to share with you. Here's to a year full of "Jennydoll" Creations! Happy New Year 2010!

So, here's to the New Year...today was a day off from work for me and a snow day for most. I wanted to try out my new cake pan from my brother and sister in law. I decided on a lemon cake with a cheesecake flavored pudding and lemon butter cream icing. The recipe for the butter cream icing you will find in my posting called "Food Creations". Otherwise, I used a boxed cake mix and sugar free, fat free pudding mix and reduced the milk about 1/2 cup. I chilled the pudding while I made the icing and sliced the cake in half. I wanted to try to use a stencil to decorate the top of the cake with a snowflake. It was not a good idea because for the life of me I could not remember how to make a snowflake. Oh well, good thing it tastes good!
